
Paleo Pumpkin Spice Latte
Fall is here! The weather is getting cooler, the comforting scents of fall spices fill coffee shops, and (you guessed it) the pumpkin spice latte craze is back.
But not so fast. Did you know that the store-bought pumpkin spice latte is full of inflammatory, artificial ingredients and outrageous amounts of sugar? “But, it’s so deliciousssss. Don’t rain on my basic-girl PSL parade!” Okay, don’t cry over your spilt PSL just yet. We understand that food is an emotional experience and should taste amazing! So, we did the dirty, recipe-developing, taste-testing work for our foodies and scoped out the best-tasting, aromatic, locally roasted coffee beans from Opus Coffee to test out our recipe! We may have landed upon the most palate-pleasing, brain-boosting, inflammation-fighting, fall-flavors-all-up-in-your-taste-buds pumpkin spice latte ever! PUMPKIN SPICE LATTE
Serves: 3-4
Cook time: 5 minutes
Ingredients:
2 cups dark brewed Opus coffee
2 cups full-fat coconut milk
¼ cup organic pumpkin purée
2 tbsp organic maple syrup
1 tsp pumpkin pie spice
1 tsp vanilla extract
½ tsp sea salt
Preparation:
- Combine all of the ingredients in a blender. Blend on high for 30 seconds or until foamy.
- Evenly divide blended mixture into 3-4 mugs. Sprinkle with a little extra pumpkin pie spice and enjoy!
